The atadillo is a bunch of wild aromatic herbs (thyme, oregano, savory, laurel) tied with a string that is usually used to flavour stews, roasts (chicken, veal), marinades or baked fish. It is usually boiled with the other ingredients and removed before serving, leaving the flavour and aroma of the herbs. In French cuisine (known as ‘bouquet garni’) it is also widely used.
